Johan Kwaaitaal supports industrial sausage manufacturers, large and small, in product and process development. Through his years of experience with food producers in Europe, Southeast Asia and China, he sees that the impact and complexity of innovation on upscaling is often underestimated: innovation is often thought of too easily. Sometimes there is great pressure on producers to develop a new product, but even then the complexity of an innovation needs to be properly assessed. After all, the end goal is to ensure that new production is tested for quality, safety and hygiene before going into production.
